I always have bourbon, apples and maple syrup in my house, and so this is an emergency dessert that is very much seasonal for this time of year.

4 cooking apples peeled, cored and cut into quarters
1/8 c lemon juice
4 T sugar
3 T butter
1/3 c maple syrup
3 T bourbon

Vanilla ice cream

Preheat broiler

Toss apples with lemon juice and 2 T sugar. Melt the butter in a baking dish approximately 6” from the heat source. Remove pan from the oven and make sure the butter coats the entire surface. Place the apples in a layer and broil until edges are golden and apples are tender, approximately 8 minutes. Sprinkle remaining sugar over the apples and broil for another minute.

Boil maple syrup and Bourbon for 2 minutes.

Serve apples and ice cream with sauce on top.
