What to do with those rolled oats you bought and don’t like to eat as oatmeal
Oatmeal Cookies is the answer. I’m supplying you with a nice base for an oatmeal cookie and you can add what ever you like into it whether it be chocoate, raisins, dates, nuts, or a combination. This is a good cookie by itself. I’ve found that people like different oatmeal cookies just like people like to fix up their oatmeal their own special way.
An Alright Oatmeal Cookie
1 cup butter room temperature
1 cup firmly packed light brown sugar
3/4 cup granulated sugar
1 tsp baking soda
1 tsp warm water
1/2 tsp salt
1/2 tsp ground cinnamon
2 large eggs, room temp
1 tsp vanilla
2 1/2 cups flour
2 cups rolled oats (not instant, duh!)
Turn on the oven to 375º and grease up a couple of cookie sheets with butter.
Cream the butter and the two sugars together until nice and fluffy. Dissolve the baking soda in the warm water and add it, the salt, the cinnamon to the butter mixture and mix well. Add the eggs and vanilla and mix well again. Mix well all the time! Scrap down the sides of the bowl. Then add the flour one cup at a time, mix well making sure it is all incorporated before moving on to add more. Add oats, mix well.
At this point you can add any goodies you like in your oatmeal cookies.
Put tablespoon fulls onto the sheet. Make them what ever style shape you like, rounded or flat. It is up to you.
Cook for about 12 minutes, or until just beginning to brown.
Remove from oven, cool for a few minutes on the rack and remove from sheet to cool.
