Rhubarb Crisp
4 cups rhubarb chopped into 1/2 inch pieces
1 extra large egg beaten
1 cup sugar
1 cup flour
1 TSP baking powder
1/2 tsp salt
1/2 cup melted butter
1 TBS soft butter to grease the pan
Prep time: 10 minutes
Total time: 30 minutes
Heat over to 425. Grease 8†pie dish with the tablespoon of butter. Add rhubarb to the dish. Mix flour, sugar, salt and baking powder in a medium sized bowl. Add egg and work it into the dry ingredients with fork or hands until is is all incorporated. Distribute evenly over the top of rhubarb, then gently pour the melted butter over the top making sure you distribute that evenly as well.
Cook for 20-25 minutes until the top is golden brown.
Serve warm with ice cream.
